I caught the baking bug after watching the Great British Bake Off so I made some lemon fairy cakes.
Ingredients
120g plain flour
150g caster sugar
1 1/2 tsp baking powder
2 tbsp grated lemon zest and juice
40g unsalted butter
120ml milk
1 egg
For the lemon frosting
250g icing sugar
80g unsalted butter
2 tbsp lemon juice
A few drops of yellow food colouring
25ml whole milk
Method
Preheat the oven to 170C
1. Cream the butter and sugar together then sift the flour and baking powder and mix with the lemon zest. Gradually pour in the milk and beat together until it is all incorporated.
2. Add the egg to the flour mixture and mix until incorporated and smooth.
3. Spoon the mixture into paper cases two thirds full. Bake in the oven for 20-25 minutes. Once cooked they should be golden brown on top and bounce back when touched.
Lemon Frosting
1. Beat together the icing sugar, butter, lemon juice and food colouring. Then when it is all incorporated slowly pour the milk in. Continue beating/mixing until all incorporated.
2. When the fairy cakes are cold the icing can be piped onto the fairy cakes.
3. Lastly I added edible pearls on top for decoration but anything can be added at this stage.
