Peanut Butter Chocolate Chip Cookies








I love chocolate chip cookies but adding peanut butter into the mix is even better. They are so easy to make and you can even freeze the dough mix if you make too much.

 Ingredients: 

225g unsalted butter (at room temperature)
200g caster sugar
150g soft light brown sugar
50g dark brown sugar
2 eggs
1/2 tsp vanilla extract
240g peanut butter
340g plain flour
2 1/2 tsp bicarbonate of soda
1/2 tsp salt
100g chocolate chips


Preheat the oven to 170C and line 2-3 baking trays.

Mix the butter and the sugars together until it is creamy. Mixing well add the eggs one at a time. Beat in the peanut butter and vanilla extract. Add the flour, bicarbonate of soda and salt and mix. Lastly stir in the chocolate chips.

*A tip I have picked up is using an ice cream scoop for the perfect size dough ball. 
Using this method line the dough on the baking trays making sure they are well spaced apart. Bake in the oven for 10-12 minutes or until they are starting to brown on top. Once you take them out leave them to cool for a few minutes on the baking tray and then transfer them to a cooling rack to cool completely.
