Mince Pies


It's time for mince pie baking yay! Just like the gingerbread recipe I put up yesterday, these are also gluten free. Carry on reading for the recipe.

Makes 10

Ingredients: 

6oz gluten free flour
3oz cold butter (cubed)
1 egg
1 tbsp of flour taken out and replaced with 1 tbsp of icing sugar
1 jar of mincemeat

To make:

Sift the flour into a bowl and take out a tablespoon of flour and replace with a tablespoon of icing sugar. This makes the pastry sweet. Then pop the cubed butter into the bowl of flour and with your fingers rub all together until you get a bread crumb consistency. 

Beat the egg in a separate bowl and then pour in and using a knife work the mixture together and it will all come together. If the pastry dough is looking sticky, sprinkle in some more flour, a little bit at a time. 

Prep the cupcake/muffin trays by greasing each case with butter.

Wrap the pastry in cling film and leave in fridge to chill for half an hour. It is now ready to roll out to about 3mm thickness. Using a cookie cutter cut out the pastry bases and pop them in to cupcake/muffin tray. Using a star cutter (or a shape of your choice, I also used Christmas tree) cut out the lids for the pies and leave aside. 

Using a teaspoon, pop 2-3 spoonfuls of mincemeat in each pastry casing. Then pop the star on top and pinch each side down to secure. 

Bake for 20-25 minutes, making sure you check on them every 5 minutes or so. The pastry will go golden brown and firm up, also check that the mincemeat is bubbling.  

Once cooked, take out of oven and leave on side to cool slightly. Carefully take the mince pies out of the tray and pop on a wire cooling rack to cool down or pop in a bowl and pour over with some cream and eat!
